1/2 Cup Brown Sugar
1/3 Cup PB2 Powdered Peanut Butter, Prepared
1 Egg White
3/4 Cup Mashed Banana (about 2 small)
2.5 Tbs Plain Non-Fat Greek
1/2 Cup Oat Flour
1/3 Cup All Purpose Flour
1/2 Tsp Baking Soda
1/8 Tsp Baking Powder
1 Tsp Cinnamon
Beat first 5 ingredients until creamy. Stir in dry ingredients. Fill cupcake liners 3/4 of the way full. Bake at 350 for 20 minutes or until a toothpick comes out clean. Makes 12 muffins.
Double Recipe to make into a bread, but will alter the nutritional information.
